These were a hit in our house! The kids are often fussy about veggies so I was amazed when they went for it. I got this from the Betty Crocker Comfort Meals cookbook and pretty much every thing made from it so far has been a hit with the kids!
1 cup shredded zucchini
1 tsp oregano (in the summer I use fresh)
Whole wheat tortilla shell
2 cups shredded cheese
Marinate sauce or salsa – the kids don’t like spicy but I do!
Spread all on tortilla shell and top with 2nd shell. Bake in oven at 350F for 6 min.
