Here’s another recipe from the Betty Crocker Comfort Foods. I thought I’d try this one for fun and was surprised at how well it turned out and how much the kids loved it. It’s a great way to put spinach in the meal without them noticing!
Spinach Gnocchi with Nutmeg
1 baking potato
1 tsp nutmeg
1 package frozen spinach thawed
1-1 1/3 cup flour
Boil potato – mash until smooth. Add rest of ingredients and form into balls.
2 tbsp butter
2 medium green onions
1 cup whipping cream
4 quarts water
1/4 cup grated Parmesan
Melt butter. Add onions cook 5 minutes. Add whipping cream & pepper. Heat to boiling and simmer 10 minutes.
Boil gnocchi 4 minutes. Drain and mix with sauce.
