My grandmother is an awesome cook.  There are so many recipes from my childhood that I love that came from her.  Here’s one of those.  She had some great desserts and before the cupcake craze started she was making these for us.  They don’t even need icing which is great for a low-mess option but still so much fun!

Curtsy Cupcakes

1 package cream cheese softened
1 egg
1 1/3 cup sugar divided
1 cup chocolate chips
1 1/2 cup flour
1/4 cup cocoa
1 cup water
1/3 cup oil
1 tbsp vinegar
1 tsp vanilla
1 tsp baking soda

Combine cream cheese, egg 1/3 sugar. Mix until smooth 3-5 minutes. Stir in chips.
In medium bowl mix flour, sugar, cocoa, water, oil, vinegar, vanilla & soda. Beat until smooth.
Fill lined tins 1/3 flour mixture, 1 tsp cream cheese mixture. Bake at 350 F for 30 minutes.
