These are again butter-free cookies and again from the same site as the previous butter-free recipes.  The kids loved these and they seem pretty healthy in terms of a cookie.  I again adapted it to suit the ingredients I had on hand.

Pumpkin Oatmeal Cookies

2 cups flour ( I used whole wheat but would only use 1/2 cup and 1 1/2 cup white flour next time)
1 1/3 cups rolled oats
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg

1 2/3 cups sugar

2/3 cup canola oil
2 Tbsp maple syrup
1 cup canned pumpkin
1 tsp vanilla

1 cup pecans, finely chopped

1/2 cup raisins

Mix together flour, oats, baking soda and spices.  Add and mix together sugar, oil, syrup, pumpkin and vanilla until very well combined. Add the rest and mix.  Drop by tablespoons onto greased cookie sheets. Bake for 16 minutes at 350F.
