We grew beans in the garden this summer and the kids suddenly decided that they like them.  I try to find different recipes to change it up a bit from the steam and serve with butter/lemon.  Feta cheese would work well with this one as well.  The recipe is from the “Europe’s Best” frozen green beans bag.

Beans with goat cheese crumble

Frozen green beans
2 tbsp oil
1/2 cup broth
1 red onion chopped
1 red pepper chopped
1/4 cup olive oil
2 tbsp lemon juice
1/2 tsp lemon peel
2 tsp dried oregano
1 garlic clove chopped
1 tsp Dijon mustard
1/2 cup crumbled goat cheese

Heat oil& beans. Add broth & mix. Cook 5-7 minutes on medium high. Transfer beans to bowl. Stir fry onion & pepper for 5 minutes. Add beans & toss. Mix oil, lemon juice, peel, oregano garlic, mustard & pepper. Combine well pour over beans. Sprinkle with goat cheese.
