Next up on our list of CSA items was Kale.  I wasn’t sure what to do with this at all.  I ate a piece raw and knew immediately the kids wouldn’t eat it.  After googling I decided that pretty much any recipe asking for spinach could use kale in it’s place.  In the end I settled on this one.  I made this soup at 10 at night and it was SO easy!!  It tastes great and I didn’t bother with the salt and it still had a nice flavor.  The kids gobbled it up and wanted more (they loved the jelly beans as they call the kidney beans).  The one batch made enough for the 2 of us and 2 kids and the other half is in the freezer for another night.  It’s definitely going on our list of favourite soups and it’s so healthy!
