Kohlrabi was next up on our list of CSA items that we had never had. I wasn’t sure of how to use it and heard it could be sliced and added to salads or cooked. I assumed it looked a little like an onion inside but found that it was more like a potato.
I sliced up the pieces and put together this recipe in a half-quantity and found it to be quite delicious. I think kolrabi would also be great in a scallop potato recipe since I found it had similar texture but much more flavorful. This is a vegetable I would pick again.
